Initially, this blend was created only from the olives grown at Stonyridge Vineyard but now cuttings from these trees have been established at Rangihoua. The trees are believed to be Verdale, Mission and Ascalano.
This oil has a good creamy base with overtones of herbs, apple, apple peel and a late peppery finish.
Waiheke Island is a small island situated in the Hauraki Gulf of New Zealand. It has a warm and windy mediterranean-like micro-climate which is ideal for olive growing. The olives thrive here with no need for chemical spraying to produce perfectly sun-ripened olives.
Once the olives are harvested, the oil is cold extracted within hours to optimize and retain the olives health enhancing qualities and taste.
